Marinated Shrimp & Artichokes


8 oz. can artichoke hearts
1/2 lb. shrimp, peeled
1/2 c. roasted red pepper, cut in strips
1/3 c. vinegar
1/2 c. olive oil
2 green onions, sliced
1 lg. clove garlic
1/2 tsp. oregano
salt & pepper, to taste

Boil shrimp; In NON-METAL bowl, add to artichokes & pepper strips.
Combine all other ingredients in a jar, shake well & pour over shrimp mixture.
Chill for 2-4 hrs. before serving.

(*This is an easy one, but Oh! So Good!! )
